His food has to be the best on the Big Island. I think it is his sauces. He said he spent several years in Scotland in a large hotel kitchen making sauces. Visitors go for Hawaiian fish. The various preparations are subtle enough not to overpower the mild fish flavors. However to me, the Chef's brown sauces on the lamb, duck and tenderloin are better." - KC posted Sunday, April 24, 2005 "Daniel Thiebaut is an overrated, high-priced restaurant that isn't worth adding to your list when so many other fine restaurants abound on the Big Island of Hawaii. First courses were the best part of the meal. But, then how hard is it to serve a decent salad course. However, our main courses were mediocre. My wife's scallops were uneventful. My opakapaka was mushy and difficult to distinguish from the mashed potatoes underneath the fish. The service is indifferent and the guy wearing the strawhat, glad-handing diners has got to go. He lurks around the dining rooms, with an unctious personality and creepy grin. This is one restaurant that advertises and promotes itself heavily. Too bad it doesn't live up to its billing.
