Fresh water trout is a local favorite- great flavor and really good Omega 3’s! We roast ours simply with olive oil, lemon and thyme and pair it with deeply flavorful and fun wedges of roasted sweet potatoes with their own seasoned salt. A side dish of swiss chard gives you the leafy greens we all know we should be eating more of, but with an extra flavor kick of toasted almonds and dried currants.
