This is my riff on a traditional Filipino dish that marries the bright acid of rice vinegar with silky coconut milk and savory tamari. After slowly poaching our locally sourced all-natural chicken legs in the umami-rich marinade I roast them to elevate this dish to transcendent flavor levels. Sticky coconut rice and local sautéed kale round things out for a truly healthful meal that is my #1 dinner to make for the people I love.
