This is a toothsome and tender chickpea stew. The tenderness comes from the slow and low cooking; the punchy flavors come from the healthy and powerful blend of spices. The chickpeas cooked and cooled in their tasty tomato liquor are rendered almost buttery. Their thick and absorbent texture means they are a perfect vehicle for gobs of proteins. This is a brilliant meat-free dish, served with spinach couscous for extra energy. I truly love making and eating this meal and my kids clamor for it!
