Coconut Beef Curry

w/ Local Tomatoes, Braised Collards and Lentils


We marinate beef in a zippy mix of lemongrass, lime, ginger, a little chili and plenty of curry spices overnight to tenderize (and flavor-ize) it, then those flavors are rounded out with a coconut curry sauce. Collard greens, tomato and lentils are stewed together to lend this dish plenty of vitamins B, K, fiber and a Southeast Asian vibe.
