Honey-Braised Lamb Shanks

w/ Butternut Squash, Apples and Caramelized Onion Couscous

Typical of a North African tagine, this dish slow-braise lamb with both sweet and salty elements, in this case, local, seasonal butternut squash and apples that provide the perfect, sweet counterbalance to the spiced braise. The lamb shank, here, turns “spoonable” and falls-off-the-bone meat in this rich stew that’s served over a warm, caramelized onion couscous.
