We searched carefully for the best sustainably farmed salmon we could find and our palates and our research aligned with Faroe Island Salmon from the icy cold waters between Iceland and Norway. Simply slow roasted with herbs and lemon zest and sitting with a really delicious stew of heirloom white beans and smoky bacon…swiss chard lightens the flavors and packs lots of virtuous greens into the dish!
