The American diet is killing us, many diseases are preventible, and yet we perpetually spend huge money on treatment instead of prevention. While there’s a ton of food innovation out there (and we need it), the answers to the worsening healthcare crisis also lie in the past.

Thomas Edison warned in 1903 that “The doctor of the future will give no medicine, but will interest his patient in the care of the human frame, in diet and in the cause and prevention of disease.”

Since 1960, the obesity rate in children has tripled and doubled for adults. We now spend over $1T a year treating the top 15 diseases and almost nothing on nutriton education. Average Americans continue to gorge on highly processed cheap fake foods. While we know the outcome, we still play Russian Roulette with our lives each day.

So how do we fix this before what we consume ends up consuming us? Fortunately, we’re wising up. People are tired of losing loved ones to weaponized food and some of us are raising our voices.

But, we don’t have to look too far back to remember a fruitful past, before we acquiesced to our cravings and desire for instant gratification - back to when we valued the importance of real food. Maybe even a simple acknowledgment of this past will help solve our future. Hope so!
