RealEats Featured Chef Michael Ferraro leads the kitchen of New York City’s buzzy Delicatessen, located at the crossroads of Nolita and SoHo. Ferraro is inspired by unique ingredients, cooking with the seasons, and international cuisine.
"At Delicatessen, my focus is international comfort food. Different than most people think, comfort food doesn't have to be unhealthy," says Chef Ferraro.
That international (and healthy) spin is obvious in his Green Curry Chicken with Cauliflower Rice, created specially for RealEats. Ferraro dresses his chicken in fresh, slightly spicy, and aromatic green curry, alongside Vitamin C-rich red bell peppers and low-carb cauliflower rice with subtle notes of coconut.
Growing up in a Southern Italian household, some of Ferraro’s favorite dishes to prepare are his father’s stuffed baby eggplants and chilled pasta with garden tomato sauce - topped with parmesan, of course. Ferraro’s cauliflower rice is actually inspired by Italian risotto:
"Being from an Italian immigrant family, risotto was a staple dish at my house growing up. For this, I've taken those old memories and put a modern spin on it."
